RMX 1000 Recording with Allen Heath 43C

Hi Guys, 

I have the Allen Heath 43C and RMX 1000 as a setup (with 2 CDJs). 

I'd like to record my set, I saw online that I have to link the output of my RMX into an audio interface and then from the audio interface to the laptop. Can you explain me better how I can also listen everything from my monitors? Cause I have two monitors connected to my RMX through RCA (to the RMX output) and XLR (to the monitors). I would like to send the output of the RMX to the audio interface and then to the laptop but still listening from my monitors as well while I record my set. 

Also, can you guys suggest me an audio interface to buy?
