When I select my audio card in the AUDIO setting of Rekordbox (6.8.5 or 7.9.8) on mac os, it works well. 

When I quit & reopen Rekordbox the setting is back to the default DDJ-FLX4 of my controller.

Is there anything I can do to fix that ?

That sounds normal to us. 

If you are using FLX4, then DDJ-0FLX4 WASAPI should and will show in preferences -> audio.
