I see this on the screen bottom left, i get that when the quantise button is turned on, this red 'quantise 1' light comes on, but what does the '1' mean?

The "Quantize" portion means that quantize is engaged.  The "1" portion is the quantize beat value.  This can be adjusted by press the [SHORT CUT] button and selected a different quantize value.
