You need to connect the output of your 250 to a external sound card that you would have hooked up to your computer. Make sure you do not exceed 0db while recording and after the set (on your computer) you can boost the signal. You do not want distortion. A lot of guys use Audacity to record sets and it's free. Here's a link http://audacity.sourceforge.net/
S/N ratio stands for Signal to Noise ratio. Refers to the level of your signal to the level of the background noise. If your just recording your mixes, I wouldn't worry so much as I (IMO) don't think you would notice the difference.
Here's a more detailed explanation on SNR.

Good luck
alright thanks, but can is use the tulip out for record and the xlr to the speakers at the same time?
alright for te S/N but i also play in small club is the mixer good enough for that, most for 60 people. but more for the sound quality.
Becouse i like a good sound from a mixer.
Does the soundcard offer as much as the djm 350?
gr niels
-Yes you should be able to use both the RCA and XLR outputs simultaneously.
-Yes the mixer should be just fine. Your Amp and speakers will have a lot to do with the quality too in that scenario.
-There is no built in sound card in the 250. The 350 however does have one and it also has the capability to record your mixes with a USB thumb drive plugged right in to it (no computer needed). Youtube is your friend :) watch some demos and remember to look for what it is you are looking for not people's general opinion (some exceptions naturally apply).
